This is a great way to turn our Big Flavor Beans into a main course meal that everyone will love. Basically, you’re just adding chunks of your favorite meat to a bowl of our beans. We like pork tenderloin, but feel free to use whatever you prefer.
Ingredients – Per person
- One cup of cooked Big Flavor Beans (see recipe)
- 6 ounces of pork tenderloin or other meat – cooked
- Roasted Poblano or NM Green Chile peppers and roasted roma tomatoes.
- Warm flour tortilla.
Trim and cube the pork tenderloin, season lightly with some freshly cracked black pepper, then cook until cooked through.
Roast a roma tomato and a poblano pepper. Remove skins and seeds and chop into desired sizes. You can also use roasted NM Green Chile instead of the poblano pepper.
Mix one cup of Big Flavor Beans with the cooked pork tenderloin and heat. Top with the roasted peppers and tomatoes.
